Beet Winter Blues

“The beet is the most intense of vegetables… The radish, admittedly, is more feverish, but the fire of the radish is a cold fire, the fire of discontent not of passion. Tomatoes are lusty enough yet there runs through tomatoes an undercurrent of frivolity. Beets are deadly serious… The beet is the melancholy vegetable, the one most willing to suffer. You can’t squeeze blood out of a turnip… The beet was Rasputin’s favourite vegetable. You could see it in his eyes.”   – Tom Robbins. Jitterbug Perfume

Intense flavours inform this beet salad at Back of House, a small art-filled restaurant in Leslieville. Laced with crispy shallots and other good stuff this salad compliments BoH’s amazing chicken sandwich: brined and sous-vide chicken breaded with Panko flakes and quinoa, topped with bruleed goat cheese, arugula pesto and cold smoked tomatoes (lusty but frivolous!) No wonder they dub this sandwich “Chicken Wonder” on the menu.IMG_2335_phixr-3

Back of House is located at 181A Carlaw Ave., behind Celline Garden Restaurant, which is on Queen St. E.  backofhouse.caIMG_3157_phixr
